The “Agostamento” concurs with the veraison of the bunches and the beginning of maturation. It consists in the slowing down of the development of the plant which begins to lignify its branches, which until now were green, so little by little the green becomes wood, changing its consistency and starting to accumulate reserve substances. With the Agostamento, the stalks of the bunches also become woody.
